This is a really cheap, quick flapjack recipe that my kids love to have for their school snack. It gets round the normal school rules of having a ‘healthy’ snack as it is homemade, albeit it’s not one to be labelled as healthy. Make it on a Sunday and it will last all week. It’s also the perfect recipe to make with the kids as there are only 5 ingredients that are available in every supermarket and it doesn’t create a load of washing up!

 

This recipe makes 15-20 flapjacks, depending on how big you like to cut them.

Use 10.5 x 9 inch rectangle cake tin, or there abouts, or a 9-10 inch round cake tin.

Preheat oven to 160⁰c or a little higher if you like crunchy flapjack.

350g cheap porridge oats e.g. 55p from Lidl

150g sultanas or glace cherries or both

175g light brown sugar

175g baking margarine

4 level tablespoons of golden syrup

 

Method – Cheap, quick flapjack recipe

  • Grease the baking tin with a little of the margarine. I use a pastry brush to do this as it’s the quickest way.
  • Weigh and mix the dry ingredients in a bowl – oats, sugar and sultanas/cherries.
  • Weigh then mix the wet ingredients (margarine and golden syrup) in a pan and then melt over a low heat and stir with a with a big spoon.

  • When all the margarine in melted, tip the dry ingredients into the pan.
  • Stir with your big spoon until all the oats are coated in the lovely syrupy margarine mixture.
  • Tip into the baking tray and press down with the back of a fork, make sure it goes all the way to the corners of the tin.
  • Bake for 25 minutes at 160⁰c for gooey, sticky flapjacks, or at 180⁰c for 20 minutes to make them a bit crunchier.

Top tips

Don’t try to cut the flapjack when it’s straight out of the oven. It’ll be like molten lava and will break up easily. Leave it to cool down first before cutting with a knife. I use one of my kids’ knives as they don’t damage the baking tin. Store in an air tight container to keep it fresher for longer.

There are loads of ways to adapt this cheap quick flapjack recipe in your own way e.g. by using chocolate chips or mixed fruit in it, adding a little cinnamon, drizzling some melted chocolate on top, or perhaps making it with honey instead of golden syrup.
