Taco Tuesday #MeatMatters

We are always looking for fun ideas to encourage our 3 children to eat a variety of healthy foods from the different food groups. Meals that take under half an hour to prepare are particularly useful to know for busy families for when you can’t start cooking until you get in after work or doing the school pick up.

Most recently, ‘Taco Tuesday‘ has emerged in our house (inspired by a certain plastic building blocks movie!). We love that alongside the tasty meat and crispy taco shell there are other components such as dips and salsa so everyone can make their taco exactly how they like it.

Our Taco Tuesday recipe is full of healthy, fresh ingredients and is quick and easy to make so we jumped at the chance to share it as part of the Brit Mums and Simply Beef and Lamb #MeatMatters Challenge.

We know that eating a balanced diet is important and we love Tesco’s 5% fat beef steak mince for being low in fat and high in flavour. Beef is naturally rich in protein and provides eight essential vitamins and minerals* including iron which is helps to reduce tiredness and fatigue.

Ingredients

For the meat filling:

500g minced beef (5% fat),

1 red and 1 green pepper,

1 onion,

2 cloves garlic,

1/2 tsp paprika,

1/2 tsp chilli powder,

1 1/2 tsp cumin,

250ml beef stock.

You could add a tin or kidney beans or taco beans this too if you like.

 

For the salsa:

Cherry tomatoes,

spring onions,

1/2 lime.

 

For the guacamole:

1 avocado,

1 small tomato,

1-2 tbsp sour cream,

1/2 lime, coriander (fresh or dried).

 

For the tacos:

1 packet of tortillas,

olive oil.

Method:

  1. Dice the onion and peppers and fry for 5 minutes in a large pan.
  2. Add the paprika, chilli powder, cumin and garlic and fry for a minute.
  3. Add the minced beef and fry until it is thoroughly cooked through and brown.
  4.  Pour over the stock and reduce it down.

5. To make the salsa: quarter the cherry tomatoes and finely slice the spring onions, put in a dish and stir to mix up. Squeeze over the juice of 1/2 – 1 lime, depending on how many tomatoes and sring onions you’ve used). You can add some salt and pepper if you like or some parsley or coriander to finish it off.

6. To make the guacamole: scoop out the flesh of the avocado discarding the skin and stone. Dice the tomato, chop the coriander and juice 1/2 a lime. To make chunky guacamole, put the ingredients in a pestle and mortar and mash. Or to make smooth guacamole, put the ingredients in a food processor and blitz for a few seconds. Stir in 1-2 tablespoons of sour cream, depending on taste.

7. To make the taco shells, brush the tortillas with olive oil and drape between the bars on your oven rack. Bake for 5 mins at 180⁰C or until a light golden colour.  Remove from the shelf and allow to cool to crisp up. Warning! This part is quite fiddly and it’s easy to burn your fingers. You can buy taco shells ready made at the supermarkets if you prefer to skip this part.

8. Grab any other bits and pieces you might want to put on your tacos e.g. rice, cheese, salad leaves. Put them in the middle of the table and tuck in!
